Soon-dobu Jigae

Soon-Dobu Jigae is a Korean soft tofu stew. It can be mild to very spicy. Essentially it's a flavorful broth with soft tofu, but can be redone in many ways to make it much more. Some have it with just tofu, kimchi and fish, while others have it with many other ingredients, such as I've made.
I've developed a few ways to make it, based on a recipe by maangchi, a Korean cook on YouTube. I like to add beef (which I marinate), seafood, and some vegetables. I've also made a more vegan version, by skipping out of the animal products and add/replace with vegetables. Either way, it's a delicious soup that I recommend anyone trying some variation of it at least once
Here's my recipe that I made for this, it can be adjusted as one would see fit. I really never go by exact measurements nor always use the exact same ingredients (in this picture, I also added sliced, baby portabella mushrooms, which was not listed in the ingredients) so feel free to adjust ^^
